Step 1: Soak ten 6-inch (15 cm) bamboo skewers in enough water to cover for 30 minutes. Choose ONE complete route: for sweet-soy chicken-and-onion skewers, follow steps 2–5 and stop after serving; for salt-only chicken skewers, skip steps 2–5 and follow step 6. Prepare the selected components while the skewers soak.
Step 2: SWEET-SOY ROUTE ONLY: Mix all ½ cup soy sauce, ¼ cup sugar, ¼ cup sake and ¼ cup mirin in a small pot. Bring to a boil and boil for 8–10 minutes until slightly thickened, then set the sauce aside. Skip this sauce entirely for the salt-only route.
Step 3: SWEET-SOY ROUTE ONLY: Cut the 1 lb boneless chicken thigh meat into about 1-inch (2.5 cm) cubes. Use EITHER the white portions of 2 long white onions OR 5–6 green onions, cut into 1-inch (2.5 cm) pieces. Thread chicken and the selected onion alternately onto the soaked skewers.
Step 4: SWEET-SOY ROUTE ONLY: Coat a heated frying pan very thinly with vegetable oil. Fry the prepared chicken-and-onion skewers over medium-high heat for about 5 minutes on the first side, turn and cook for another 5 minutes. Continue as needed until a thermometer in a thick chicken piece reads 74°C (165°F), and the onions are tender.
Step 5: SWEET-SOY ROUTE ONLY: Immediately dip the fully cooked skewers into the prepared sweet-soy sauce to coat them, and serve. Use sauce as needed; its retained amount is not specified. Stop here and do not cook the salt-only route as an additional batch.
Step 6: SALT-ONLY ROUTE, INSTEAD OF STEPS 2–5: Cut the same 1 lb boneless chicken thigh meat into about 1-inch (2.5 cm) cubes and thread just chicken onto the soaked skewers. Sprinkle with salt to taste. Coat a hot frying pan very thinly with vegetable oil and fry over medium-high heat for about 5 minutes on the first side, then turn and cook for another 5 minutes. Continue as needed until a thick chicken piece reaches 74°C (165°F). Serve without onions or sweet-soy sauce; this is the alternative complete route.
