Step 1: Peel and dice the 5 large yellow onions.
Step 2: Trim the 1 lb beef stew meat and cut into bite-size cubes if not already diced.
Step 3: Melt the 100 g butter in a large pot over medium heat. Add the prepared onions and sauté until golden.
Step 4: Lift the golden onions out of the pot and reserve them, leaving the cooking butter behind. Increase to medium-high heat and brown the prepared beef for about 5 minutes, turning to brown all sides.
Step 5: Return the reserved onions to the browned beef. Stir in the 1 tbsp half-sharp Hungarian paprika, 2 tbsp sweet Hungarian paprika, ½ tsp dried marjoram OR 1½ tsp fresh marjoram, 1 tsp initial salt and the minced garlic (1 clove) clove. Add the 1 litre beef broth, cover and gently simmer over medium-low heat for 1 hour. Add a little extra broth OR water only if needed to prevent the soup drying out.
Step 6: While the beef simmers, char the 2 bell peppers under a high broiler on a bare broiler-safe metal pan for about 10 minutes, turning every few minutes until the skins blister. Cool until handleable, then peel off the charred skin, remove stems/seeds and chop. Peel and dice the 2 potatoes and dice the 4 tomatoes.
Step 7: Stir the prepared vegetables into the soup and gently simmer for another 30 minutes, until the beef and potatoes are tender. Continue as needed for tenderness, adding a little extra broth OR water only if the soup cooks down too much.
Step 8: Remove the cooked soup from the heat and stir in the 100 ml red wine. Adjust the seasoning with the separate extra salt and black pepper to taste.
Step 9: Serve the soup with a spoonful of sour cream and ready sliced bread.
