Step 1: Drain the 450 g tofu, wrap it in a kitchen towel and press between plates with a stable weight for 30 minutes.
Step 2: Drain the expressed liquid, unwrap the pressed tofu and cut it into 12 pieces.
Step 3: Fry tofu: Heat a non-stick pan or a cast-iron skillet over medium heat. Add three tablespoons of oil and swirl to coat the pan/skillet.
Step 4: Sprinkle tofu pieces with salt and pepper, coat with all-purpose flour, and fry in hot oil until golden brown.
Step 5: Grind the shallots (100 gram), garlic (2 cloves), eight chillies, ginger (1-inch piece), galangal (1-inch piece), five candlenuts OR macadamias and toasted shrimp paste (1 teaspoon) into a smooth paste. Separately massage 1 tsp tamarind with 1 tbsp water and strain, reserving its extracted liquid.
Step 6: Cook the tofu dish: Heat oil (3 tablespoon) in a wok over medium-high heat and sauté spice paste until fragrant, about 4 minutes.
Step 7: Add tamarind liquid, lemongrass (1 stalk), Indonesian bay leaves (2), kaffir lime leaves (2), salt (½ teaspoon), and coconut palm sugar (1½ tsp). Mix well.
Step 8: Add fried tofu pieces. Stir and continue cooking until the sauce is thick. Stir in sweet soy sauce (2 tablespoon) and cook for another minute.
Step 9: Serve: Turn off the heat, discard lemongrass, daun salam, and kaffir lime leaves. Transfer to a serving plate and serve with steamed white rice.
