Step 1: Thaw the butter puff pastry (227 g) according to its package directions and keep it cold while preparing the filling. Heat the oven to 190°C (375°F) and line a baking sheet with baking parchment.
Step 2: Toss the 454 g peeled, cored and thinly sliced apples (454 g) with the 26 g sugar and 8 g filling flour. Stir in the 25 g sliced almonds and 38 g raisins only if using them.
Step 3: Lightly flour the work surface with additional flour. Gently roll the 227 g thawed butter puff pastry into a rectangle about 30 × 40 cm (12 × 16 inches), keeping it cold and working quickly.
Step 4: Spread the prepared apple filling over the lower half along the long side of the rolled pastry, leaving a 2.5 cm (1-inch) border around the outside. Fold in the short sides, then roll up like a jelly roll. Place the strudel seam-side down on the lined baking sheet.
Step 5: Beat the egg (1) with the 15 ml water to make egg wash. Brush the assembled strudel with only as much wash as needed, then discard unused raw wash. Cut diagonal slashes about 6 mm (¼ inch) deep across the top so steam can escape.
Step 6: Bake the egg-washed strudel at 190°C (375°F) for 35–40 minutes, until golden brown and the pastry is cooked through.
Step 7: Let the baked strudel cool before dusting with powdered sugar. Cut into about 8 slices and serve, with ready whipped cream if desired.
