Step 1: In a small pot, combine sugar and just enough of the coconut milk (1 ¼ cups) to cover, then heat, stirring frequently, until the sugar is dissolved. Remove from heat, then add shredded coconut, salt (0.375 tsp) and the remaining coconut milk. Let cool completely.
Step 2: In a mixing bowl, whisk rice flour (75 g), all-purpose flour (75 g) and baking powder (1 tsp) together.
Step 3: Beat eggs (2) well and stir into the cooled coconut milk mixture.
Step 4: Pour the coconut milk mixture into the flour bowl and stir with a rubber spatula just until combined, making sure to scrape all the way to the bottom of the bowl. Stir in the corn (or whatever you are using) and rest the batter for 30 minutes before using.
Step 5: If serving all of them right away, preheat oven to 200°F, this is to keep all your waffles warm while you make the rest.
Step 6: Cook the rested batter in a preheated waffle iron until golden brown, following the iron instructions. The author uses a little less than ½ cup batter per waffle and gently rests the lid on the batter without clamping it, to keep the waffles thicker; the amount and settings depend on your iron.
Step 7: Keep finished waffles warm in the 200°F oven while cooking the rest if serving immediately. Cool extras completely on a rack and freeze in a freezer bag. Reheat in a toaster oven until heated through and lightly crisp.
