Step 1: Trim off any wing (12) tips if present, then cut each of the twelve wings at the knuckle into two edible pieces with sharp kitchen scissors. Peel and mince the garlic (2 cloves), finely grate the lemon zest and squeeze its juice. Mix all the garlic, lemon zest and juice, cumin seeds (1 tsp) and olive oil (2 tablespoons) with salt and black pepper to taste, then toss all twenty-four wing pieces in this marinade.
Step 2: Cover and refrigerate the complete marinated wing dish for at least one hour, or overnight if convenient.
Step 3: For the oven route, heat to 200°C conventional / 180°C fan / Gas 6 and bake all the marinated wing pieces on a tray for forty-five to fifty minutes until crisp and fully cooked through. Drizzle the measured tablespoon honey (1 tablespoon) over them for the final ten minutes. Alternatively cook on a hot outdoor barbecue for about twenty minutes, turning as needed and adding the honey for its final ten minutes. Check the thickest wing pieces reach 74°C / 165°F before serving; the timer describes the oven route only.
Step 4: Serve the cooked honey-glazed wings on a platter. If desired, offer separate bowls of olives, pistachios or almonds, dates, pickled chillies and flatbreads alongside.
