Step 1: Combine the ground chicken (1/2 lb), 1 tablespoon sugar, soy sauce (2 Tbsp), mirin (1 Tbsp) and sake (1 Tbsp) in a medium pot. Cook over medium heat, stirring constantly with four chopsticks to break the chicken into small crumbs. Continue until the chicken is fully cooked, reaching 74°C (165°F), and the sauce has evaporated.
Step 2: In a separate pot, mix the eggs (3) with the remaining 1 teaspoon sugar and ¼ teaspoon salt. Cook over medium heat, stirring constantly with four chopsticks, until the eggs form small soft crumbs and are cooked through without becoming hard. Remove from the heat and stir briefly until fully set.
Step 3: Bring a pot of water with some salt to a boil. Boil the green beans (15) for 2–3 minutes, until tender, then drain and slice thinly.
Step 4: Divide the four prepared portions of steamed rice (4) among four bowls. Divide the cooked chicken soboro, scrambled eggs and sliced green beans over the rice, and serve.
