  1. Step 1: Use aged basmati rice (1½ cup). Rinse it three times, then soak in the separate three cups soak water for twenty minutes. Drain thoroughly. Choose one cooking route: ordinary pot steps 2–5, stovetop pressure cooker steps 2–4 then 6, or Instant Pot step 6 directly. Use only the cooking-water amount for that route.

  2. Step 2: Ordinary-pot or stovetop-pressure route only: heat the chosen two tablespoons ghee, oil or butter over medium heat. Add cumin, bay, cardamom, cinnamon, cloves and optional mace; let them sizzle about two minutes until aromatic. Instant Pot users skip to 6.

  6. Step 6: Choose one pressure route. STOVETOP: after step 4, close the cooker and cook on high until one whistle; turn off and let pressure fall fully, following the manufacturer’s safe release instructions before opening. INSTANT POT: skip steps 2–5. On Sauté heat the chosen two tablespoons fat, add all whole spices and sizzle one minute. Add optional chili and the same soaked drained rice; sauté two minutes. Add only 1¾ cups + 2 tbsp cooking water and salt, stir and cancel Sauté. Close with the vent sealed and pressure-cook HIGH five minutes. Wait one minute, then use the manufacturer-approved manual release procedure; open only when pressure has dropped fully.
