  1. Step 1: Blend the whole red onion (1) and all 4 garlic cloves into a fine paste; reserve it for the sambal. Peel and devein the twenty topping prawns (20) and refrigerate the meat until stage 13.

Uses 1 red onion(s) · 4 garlic cloves · 20 prawns, peeled and deveined, for the noodle-bowl topping

Onion and garlic blended into a fine paste.
  2. Step 2: Put all 250 grams pork bones in a pot with the separate 1,000 millilitres blanching water. Heat over high heat for about 5–6 minutes until surface scum appears, then lift out and drain the bones. Discard this entire blanching liquid. Continue promptly through the sambal preparation to simmering these bones in the broth at stage 10.

  3. Step 3: In a separate soup pot, heat all ½ cup oil over low heat and fry all six sliced shallots for about 5 minutes, until golden. Lift out and drain the fried shallots for the final topping, leaving the shallot-flavoured oil in the pot.

  7. Step 7: Continue only as needed until red oil separates from the cooked sambal. Spoon the sambal into a clean bowl, leaving the separated excess oil in the soup pot for the prawn shells. Reserve the actual sambal batch: stage 12 takes a measured ½ cup; any remainder can accompany the bowls.

  8. Step 8: Add the separately measured 200 grams prawn heads and shells to the red oil left in the soup pot. Cook for about 5 minutes over medium-high heat, stirring, until their released moisture evaporates and the flavour concentrates.

Cook the two fish cakes and twenty chilled peeled prawns for about 3–4 minutes, continuing as needed until the fish cakes are fully cooked and the prawn centres are opaque and firm. Separately boil all four eggs for at least 6 minutes and continue until their whites and yolks are firm; peel and halve. Prepare all 200 grams yellow noodles and 100 grams rice vermicelli according to their packages, hydrating first if required. Fresh or hydrated noodles may need about 2–3 minutes, depending on the product. Drain and divide the noodles among four bowls. Add the hot finished broth, all cooked toppings, fried shallots and any recovered cooked pork. Offer additional cooked sambal if desired; refrigerate unused sambal promptly.
