Method6 steps · about 3 hr 45 min

  1. Step 1: Flatten the aburaage gently with a rolling pin. If using 4 rectangles, cut each in half to make 8 pouches; for 8 squares, cut open one side. Carefully open the pockets, boil in separate hot water for 1 minute, then drain well.

Briefly blanch aburaage · 1 minUses 8 Aburaage squares (or 4 rectangle) · Water for briefly blanching aburaage, discarded

  2. Step 2: Bring the 2 cups water, 3 tablespoons soy sauce and 4 tablespoons sugar to a boil. Add the prepared aburaage and simmer 10–15 minutes. Cool promptly and refrigerate in the seasoned liquid for at least 3 hours or overnight.

Simmer aburaage · 15 minUses Opened blanched drained aburaage pouches · 2 cups water (480 ml) · 3 Tbsp soy sauce · 4 Tbsp sugar

  3. Step 3: Hydrate shiitake mushrooms in water for 30 minutes. You can reserve the liquid to mix with Dashi later if you want.

Hydrate dried shiitake · 30 minUses 3 dried shiitake mushrooms · Water for soaking dried shiitake, optionally reserved for the 1 cup vegetable broth

  4. Step 4: Remove stems from Shiitake mushrooms and slice thinly. Cut carrots (1) thinly (1 1/2" long).

Uses Hydrated drained shiitake mushrooms · 1 small carrot

  5. Step 5: Bring 1 cup dashi, 1 tablespoon soy sauce and 1 tablespoon sugar to a boil. Add the sliced carrots and mushrooms and simmer until tender and the liquid is almost gone. Instead of dashi, use 1 cup total of reserved shiitake soaking liquid, or mix the two within that 1 cup.

Uses Sliced hydrated shiitake and thin carrot strips · 1 cup Dashi (or liquid from rehydrating Shiitake mushroom) · 1 Tbsp soy sauce · 1 Tbsp sugar

  6. Step 6: Mix sushi rice (3 cups), cooked vegetables, and sesame seeds (1 Tbsp) well. Make 8 small oblong rice balls (there may be leftover rice). Squeeze the Aburaage just a little and stuff rice balls in the pouches.

Uses Chilled sweet-soy aburaage pouches · Simmered mushrooms and carrots · 3 cups Sushi rice · 1 Tbsp sesame seeds
