Easy Apple Strudel Recipe – Melania's einfacher Apfelstrudel
From the zcook collection
Melania’s Austrian apple strudel uses a homemade lard dough with a slightly cake-like texture. Make the full dough batch, fill and bake only one third with the apples, and store the other two portions. Makes one filled strudel plus dough for two more; the photograph shows optional whipped cream.

Step 1: Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper and set it aside.
Step 2: Mix all three cups flour with the two teaspoons dough salt. Cut all the lard into this flour mixture.
Step 3: Add both beaten eggs (2 large) and all the ginger ale to the lard-and-flour mixture. Bring the mixture together.
Step 4: Gather the dough together, knead it lightly and form a ball. Divide it into three equal portions. Wrap two portions securely and refrigerate for up to a day or two, or freeze for longer storage. Keep the remaining third to make the one apple strudel now.
Step 5: Lightly flour the counter with the separate rolling flour. Roll only the reserved one-third dough portion as thinly as possible into a rectangle about 12×16 inches.
Step 6: Spread the full apple filling over the rolled dough, leaving about 2 inches clear at the long edge and 1 inch at the short ends. Sprinkle the small handful of raisins and all the measured filling sugar over the apples, then dust with cinnamon.
Step 7: Fold the clear edges over the filling and roll the strudel lengthwise. Make about three diagonal slashes in the top.
Step 8: Transfer the rolled and slashed strudel to the parchment-lined baking sheet, seam side down.
Step 9: Bake the one strudel for about 30 minutes, until golden brown. Check the actual pastry and continue if needed.
Step 10: Let the baked strudel cool before sprinkling with the separate powdered sugar and serving. The remaining two dough portions stay stored for future use. Whipped cream shown in the photograph is an optional serving accompaniment.
