Step 1: Soften all the dried rice-stick noodles (180 g) in water (2 tbsp) according to their packet directions until ready for stir-frying, then drain and keep ready. In a separate small bowl, mix all the dark soy sauce (2 tbsp), oyster sauce (2 tbsp), soy sauce (2 tsp), white vinegar (2 tsp), sugar (2 tsp) and the separate two tablespoons sauce water until the sugar dissolves.
Step 2: Peel and mince both garlic cloves (2). Wash and chop the Chinese broccoli, measuring four cups in total and keeping its stems and leaves separately. Put the garlic and both tablespoons peanut oil (2 tbsp) in a wok over high heat. When hot, add all the raw thinly cut chicken (1 cup) and all the prepared broccoli stems, keeping the leaves ready. Cook until the chicken is lightly golden and fully cooked to at least 74°C / 165°F.
Step 3: Push the actual cooked chicken and broccoli stems to one side of the wok. Crack the egg (1) into the cleared space and scramble until firm and fully cooked, then combine it with the chicken and stems. Avoid burning the egg onto the pan.
Step 4: Add all the actual drained softened noodles, held prepared broccoli leaves and the actual mixed sauce to the cooked chicken-egg-stem pan. Toss gently until the noodles are stained dark, the leaves wilt and everything is thoroughly hot.
Step 5: Serve the actual finished noodles immediately, portioning the complete batch as needed.
