Step 1: Scrub and wash all the small potatoes (650 g) and put them in a pot. Cover with fresh cold water, bring to a boil and boil for about twenty minutes until tender.
Step 2: Check the potatoes with the point of a knife. They are ready when it passes easily into their centres; continue boiling if necessary.
Step 3: Squeeze the half lemon. Whisk all its juice with the harissa spice mix (1 tsp), both teaspoons olive oil (2 tsp) and the measured pinches of dressing salt (1 pinch) and black pepper (1 pinch) in a small bowl.
Step 4: Drain all the tender potatoes and discard their cooking water. When safe to handle, roughly cut each potato in half and keep the complete cooked potato batch together.
Step 5: Wash, trim and slice all four spring onions. Stir all the spring onions and the complete prepared harissa-lemon dressing through the cooked potato halves.
Step 6: Wash and dry all the rocket (150 g) and arrange it in a large salad bowl.
Step 7: Top the prepared rocket with the entire dressed potato mixture and toss gently to combine.
Step 8: Crumble all eighty grams feta (80 g). Wash and chop the twenty fresh mint leaves (20). Add all the crumbled feta and chopped mint to the salad and sprinkle all two tablespoons pine nuts over it.
Step 9: Taste the complete finished salad and add the separate additional salt and black pepper only if needed. Serve as a salad or side, portioning as desired.
