Step 1: Preheat the oven to 180°C / 350°F.
Step 2: Heat the ½ tbsp oil in a frying pan over high heat. Add the diced bacon (250 g) and cook until lightly browned and cooked through. Lift it onto a paper-towel-lined plate to drain excess fat, then let it cool.
Step 3: Trim the ends from the baguette (1) and cut it into halves or quarters; quarters are easier to stuff.
Step 4: Use a long bread knife to hollow out each baguette section, leaving a bread-and-crust wall about 1.5 cm / ½ inch thick. Set the removed bread aside for another use.
Step 5: Mix the cooled drained bacon, softened cream cheese (250 g), cheddar, mozzarella, prepared jalapeños (¼ cup), scallions (1 cup) and black pepper until evenly combined.
Step 6: Use a knife or piping bag to pack the cheese-and-bacon filling into the hollow baguette sections. Fill the cavities without splitting the bread; refrigerate any excess filling separately.
Step 7: Gently melt the butter (3 tbsp) with the minced garlic (2) and pinch of salt on the stove or in the microwave. Remove from the heat once melted.
Step 8: Brush the outside of the stuffed baguette sections with the prepared garlic butter.
Step 9: Cut the stuffed baguette into slices about 1¼ cm / ½ inch thick.
Step 10: Keep the slices pressed together in their original loaf shape and transfer them to a large sheet of foil.
Step 11: Wrap the sliced baguette in the foil and bake for 15–20 minutes, checking from 15 minutes, until the bread is crusty and the filling is hot with the cheese melted.
Step 12: Unwrap carefully and serve warm, pulling the slices apart at the table.
