Step 2: Mix all 2½ tablespoons ketchup, 2 tablespoons chili sauce, 1 tablespoon oyster sauce, 1 teaspoon honey, 3 tablespoons mango juice, ½ teaspoon apple cider vinegar and ½ teaspoon sugar in a bowl. Season with a little salt to taste and set the sauce aside; adjust with additional sugar only if needed.
Step 3: Heat ½ tablespoon of the cooking oil in a skillet. Stir-fry the quartered half-onion (½) and both prepared half-peppers until fragrant and lightly charred. Transfer all the vegetables to a plate and reserve.
Step 4: Heat the remaining 2 tablespoons cooking oil in the same skillet. Add all the cornstarch-coated chicken from step 1 and stir-fry until its surface turns white. Add all the cubed half-mango and stir gently to combine; the chicken finishes cooking in the next step.
Step 5: Add all the mixed sauce from step 2 and all the cooked onion and peppers from step 3 to the chicken and mango from step 4. Stir gently until the sauce is hot and coats everything and the thickest chicken pieces reach 74°C (165°F). Avoid prolonged cooking that breaks up the mango. Taste and adjust with a little salt or additional sugar only if needed. Serve immediately, with ready steamed rice if desired.
