  1. Step 1: Mix the shrimp (1 lb), Shaoxing wine (1 tbsp), salt (1/4 teaspoon), ginger (1 tsp) and white pepper (¼ tsp) together in a medium bowl. Marinate for 10 minutes while preparing other ingredients.

Marinate shrimp while preparing nuts and sauce · 10 minUses 1 lb shrimp, peeled and deveined · 1 tbsp Shaoxing wine · 1/4 teaspoon salt · 1 tsp grated fresh ginger · ¼ tsp ground white pepper

  2. Step 2: Line a baking sheet or large plate with parchment paper.

  3. Step 3: Heat the oil (1 tbsp) in a small or medium nonstick skillet over medium heat until just turning warm. Swirl the pan to let the oil coat as much surface as possible. Sprinkle the sugar (2 tablespoons) into the pan in a thin layer.

  4. Step 4: Turn to medium-low heat. Cook, swirling the pan occasionally, until most of the sugar has melted and starts turning an amber color, 3 minutes or so.

  5. Step 5: Add the walnuts. Stir everything together to let the sugar coat the nuts as evenly as possible. Keep cooking and stirring until all the sugar has melted and the sugar turns a golden brown color, about 2 minutes. Then immediately transfer everything onto the lined baking sheet.

  7. Step 7: Mix the mayonnaise (1/4 cup), condensed milk, honey (2 tsp), rice vinegar (2 tsp), and soy sauce together in a small bowl. Stir to mix well.

Uses 1/4 cup mayonnaise · 1 tbsp sweetened condensed milk · 2 tsp honey or maple syrup · 2 tsp rice vinegar or lemon juice · ½ tsp light soy sauce or regular soy sauce

  8. Step 8: Right before cooking, add the cornstarch (4 tablespoons) to the marinated shrimp. Coat the shrimp evenly.

  9. Step 9: Heat the separate shrimp-frying oil (¼ cup) in a skillet over medium heat. Fry the coated shrimp without overlap, in two batches if needed, turning until golden on both sides and their flesh is opaque and pearly. Transfer to a large plate to cool slightly.

  10. Step 10: Let the fried shrimp cool for a few minutes until no longer hot enough to melt the mayonnaise, while still warm. Put them in a large bowl, leaving pooled oil and juices on the plate. Add the prepared sauce and toss gently.
