Step 1: Heat the oven to180°C /160°C fan. Grease a20cm square tin with a little extra butter and line its base with baking paper.
Step 2: Beat the cake butter and caster sugar (100g) until pale and creamy, then beat in both eggs (2). If the mixture starts to curdle, beat in one tablespoon from the measured140g self-raising flour; keep the rest for the next step.
Step 3: Sift the remaining flour, baking powder (1 teaspoon) and cocoa (2 tablespoons) over the creamed mixture and fold in gently. Stir in all the milk (2 tablespoons) to make the cake batter.
Step 4: Transfer the batter to the prepared tin and level the top. Bake for18–20minutes until the cake springs back when pressed.
Step 5: Leave the cake in its tin until completely cool.
Step 6: Gently heat the plain chocolate (100g), icing butter (25 g) and four tablespoons of water in a saucepan until melted. Cool slightly, then beat in all the icing sugar (100g) until smooth.
Step 7: Lift the cooled cake from its tin, remove the paper and cut it into sixteen squares.
Step 8: Dip each square in the chocolate icing and roll it in the desiccated coconut (100g). Place on a cooling rack until the coating sets, then serve. Keep any unused dipping icing or coconut separately.
