Method6 steps · about 10 min
Step 1: Place the 350 g diced raw chicken thighs in a bowl with 1 tsp julienned ginger, the marinade’s 1 tsp cornstarch and 1 tbsp water. Rub and mix until no loose liquid remains. Mix in 1 tsp sesame oil and set aside while preparing the sauce and vegetables.
Step 2: Mix 1 tsp freshly ground black pepper, the sauce’s 2 tsp cornstarch, 3 tbsp oyster sauce, 1 tsp light soy sauce, 1 tsp dark soy sauce and 3 tbsp water. Have the half red bell pepper, small onion, 50 g celery and scallions chopped before heating the wok.
Step 3: Heat the separate 2 tbsp cooking oil in a wok over high heat. Add the prepared chicken and stir-fry until the cubes become pale on the surface; they will finish cooking in the next stage.
Step 4: Add the diced onion (1), half red bell pepper and celery (50 g). Stir-fry for about 2 minutes, then continue if needed until the chicken is fully cooked through to 74°C (165°F).
Step 6: Scatter over the 1 tbsp finely chopped scallions. Transfer to a serving dish and serve immediately, with ready plain rice if using.
