Step 1: If using rum-soaked raisins (30 grams), combine the optional 30 g raisins and 30 ml rum now and let soak while preparing the batter. Alternatively, keep the raisins plain or omit them.
Step 2: If making berry compote, combine its 250 g mixed berries, separate 40 g compote sugar and ½ tsp compote vanilla in a saucepan. Gradually heat on low until the berries break apart and simmer; add a little separate water only if the compote would dry out. Keep ready for serving.
Step 3: Whisk the 4 egg whites with the one pinch salt until stiff. Set aside.
Step 4: Beat 300 g flour, the separate 30 g batter sugar, 4 egg yolks, 300 ml milk and 1 tsp batter vanilla until combined. The one pinch salt is already in the beaten whites.
Step 5: Gently fold the stiff beaten whites into the yolk batter.
Step 6: Heat a large cast-iron pan over medium-low heat. Melt the 40 g cooking butter, immediately add the folded batter and cook for about 1 minute.
Step 7: Cut the partly cooked pancake into quarters with a flat spatula and carefully turn the quarters. The top may still be runny. Cook the second side for about 1–2 minutes.
Step 8: If using rum-soaked raisins, drain and discard the excess soaking rum. Keep the drained raisins, or the plain raisin alternative, for the final cooking stage.
Step 9: Break the pancake quarters into smaller irregular pieces and cook for about 5 more minutes until golden and fully set throughout. After about 4 minutes, stir in the optional prepared raisins. Serve the cooked pieces with the optional prepared berry compote OR ready applesauce OR ready plum butter, and dust with powdered sugar.
