Step 1: Peel and coarsely grate both onions (2). Break the whole garlic bulb (1) into cloves, peel and finely chop them. If using coriander (1 bunch), wash and chop the bunch. Mix all the raw minced lamb (1 kg), grated onion, chopped garlic, six tablespoons garam masala, tablespoon chili sauce (1 tbsp) and generous salt (1 generous pinch) pinch thoroughly in a large bowl, adding the optional coriander if wanted.
Step 2: Divide the actual kofta mixture into sixteen equal portions and pat into small burgers. Keep the formed patties chilled if they are not being cooked straight away.
Step 3: Heat the oven grill to its highest setting. Lay the formed patties in a single layer on a baking tray and grill on the highest shelf for five to six minutes on each side, until browned and cooked through. Check their centres reach at least 71°C / 160°F, continuing to cook as needed. Cook remaining formed patties in further batches, keeping raw-meat utensils away from cooked burgers.
Step 4: Wash, halve and slice all four tomatoes. Trim, wash and shred the half red cabbage. Peel and slice the optional red onion (1) if wanted. Put the fully cooked burgers on a platter and serve with all eight pita breads, the prepared vegetables, plain yogurt and optional extra chili sauce, letting each of eight people assemble a sandwich with two small burgers.
