Method5 steps · about 10 min

  1. Step 1: Switch on the panini grill and let it become very hot before the sandwich goes in. Keep the grill in view; no fixed preheating time is specified.

  2. Step 2: Split the baguette (1) lengthwise into a top and bottom, keeping both pieces for the sandwich.

Uses 1 baguette, split lengthwise for the toastie

  3. Step 3: Mix the 2 tbsp zaatar with a drizzle of extra virgin olive oil to make a runny, spreadable paste. Spread it evenly over the cut face of one bread half; keep the other half for closing the sandwich.

Uses 2 tbsp zaatar seasoning blend · A drizzle of extra virgin olive oil, enough to make the zaatar spreadable · Both split baguette halves

  4. Step 4: Scatter the handful of mild mozzarella over the zaatar-coated half. Close with the reserved bread half and carefully put the filled sandwich in the hot panini grill.

Uses Zaatar-coated baguette half and reserved plain half · A handful of mild mozzarella suitable for melting

  5. Step 5: Toast while watching the bread until the cheese melts and becomes oozy and the bread is toasted. About 5 minutes is the source cooking guide, but follow the actual melting and browning. Lift out carefully, cut into portions to suit the bread size and serve warm.

    Uses Filled cheese-and-zaatar toastie
