Method7 steps · about 25 min
Step 1: Prepare the sliced scallions, chopped onion, tomatoes, peppers and kale, and measure the spices and minced ginger. Put the 1–2 ripe plantains, still in their skins, in water to cover. Bring to a boil, then boil for roughly 15 minutes until tender but still firm enough to slice.
Step 2: Drain the boiled plantains from step 1 and let them cool enough to handle. Cut off the tips, slit the skins lengthwise, peel and slice the flesh into little discs.
Step 3: Meanwhile, heat about 2 tbsp coconut oil in a pan over medium heat. Sauté the sliced 2 large scallions and chopped small red onion (1) for 30 seconds.
Step 4: Add the 2 chopped tomatoes, cup of mixed chopped bell peppers, 1 tbsp minced ginger, 1 tsp turmeric, ¼ tsp allspice, 1 tsp thyme and ¼ tsp Himalayan pink salt to the aromatic pan from step 3. Toss and stir so the vegetables are thoroughly coated.
Step 5: Add all the peeled plantain discs from step 2 to the seasoned vegetable pan from step 4. Toss gently so the plantain becomes coated and takes up the spices.
Step 6: Add the chopped large bunch of kale to the plantain-and-vegetable pan from step 5 last. Cook and combine for another minute, until the kale is wilted and the mixture is hot.
Step 7: Serve the finished plantain, kale and vegetables from step 6 hot.
