Method7 steps · about 40 min
Step 1: Combine the chicken (200 g) cubes with lime juice, salt (to taste) to taste and enough additional water for the marinade. Refrigerate for fifteen minutes, then drain and discard the marinade. Do not rinse raw poultry.
Step 2: Heat the oil (3 tbsp) in a pan or wok, over medium heat. Add the sliced shallots (4). Sauté until soft and fragrant, about 3 min.
Step 3: Add the chopped ginger (1 inch), garlic (3 cloves) and spring onions (2 tsp). Sauté until fragrant, about 2 min.
Step 4: Add the white pepper (½ tsp), lemongrass (1 stalk), galangal (1 inch), green chillies (2) and bird’s eye chillies (2). Sauté for another 2 min.
Step 5: Add the sweet soy sauce (2 tbsp), bay leaf (1) and water (100 ml). Bring to a boil.
Step 6: Add the drained chicken. Lower the heat and cook, stirring continuously, for about ten minutes until the gravy reduces and the chicken is cooked through; check 74°C (165°F) in the thickest part and continue cooking if needed.
Step 7: Increase the heat and stir until the sauce has thickened and most of the liquid has evaporated. Turn off the heat and serve.
