Step 1: Wash the potatoes and trim the beans (225g). Start boiling the potatoes in salted water. At minute six add all four pasteurized shell eggs, and at minute ten add the beans. At minute twelve lift out the eggs and beans with a slotted spoon; the eggs have cooked for six minutes and the beans for two. Cool the eggs under cold running water. Drain the potatoes when tender, continuing to boil them separately if they need longer than twelve minutes. Keep the drained potatoes and beans together for the salad.
Step 2: Meanwhile slice the cured chorizo (225g) and fry for one to two minutes until beginning to crisp and release its fat. Lift the cooked slices out with a slotted spoon and keep them aside, leaving their rendered fat in the pan.
Step 3: Peel and slice the garlic clove (1). Cook it gently in the rendered chorizo fat for one minute without letting it burn.
Step 4: Take the garlic pan off the heat. Wash and chop parsley (2tbsp) to make two tablespoons and stir it into the warm garlic fat with all the sherry vinegar (2 tbsp). Toss with the cooked potatoes, beans and reserved fried chorizo, seasoning with salt and black pepper to taste. Peel and quarter the cooled soft-boiled eggs and arrange them on the salad. Serve immediately.
