Method6 steps
Step 1: Divide the 500 g ground beef into two equal 250 g portions. Heat part of the listed vegetable oil, reserving the rest for shallow frying. Sauté diced onion (1) for a couple of minutes until softened.
Step 2: Add the first 250 g half of beef to the onion. Sauté over medium-high heat about 6 minutes until cooked through. Remove from the heat and allow to cool before mixing.
Step 3: Combine cooled cooked beef and onion with the remaining 250 g raw beef. Add one egg only, salt (2 teaspoon), red pepper (1 tbsp), black pepper (1 teaspoon), the listed boiled rice and finely chopped parsley. Knead and mix evenly.
Step 4: Spread flour (4 tbsp) on a flat plate. Put a small cup of water alongside for wetting hands. Beat the remaining three eggs in a separate bowl for coating.
Step 5: Wet your hands with the prepared water and shape the filling into egg-sized oval meatballs, keeping them moderately thin for even cooking.
Step 6: Coat each shaped meatball in prepared flour, then in the beaten-egg coating. Shallow-fry in the reserved oil about 3–5 minutes per side, until crisp and golden and the ground-beef centre reaches 71°C/160°F. Cook in batches as needed. Serve with optional ready mashed potatoes from the author note.
