Step 1: Heat the oven to 400°F (205°C) and set out an oven-safe baking pan. Have a saucepan ready for glazing after baking.
Step 2: Gently combine both ground meats, the egg (1), panko (¼ cup), the three chopped green onion stalks, minced garlic (5) and ginger (1 knob), sesame oil (1 tsp), salt (2 tsp) and optional white pepper (1 tsp). Mix just until evenly combined.
Step 3: Divide the complete meatball mixture into 12 similar portions and shape them into medium meatballs. Arrange all 12 in the oven-safe baking pan.
Step 4: Bake all 12 meatballs at 400°F (205°C) for about 20 minutes. Check the centre of a meatball with a food thermometer: the ground pork-and-beef mixture should reach 160°F (71°C). Continue baking if needed.
Step 5: Transfer all the baked meatballs to the saucepan. Add the full ½ cup prepared teriyaki sauce and heat over medium-low heat until it bubbles gently. Simmer for about 5 minutes, turning the meatballs carefully, until the sauce coats them with a glaze; it can remain a little thinner if you want sauce for the rice.
Step 6: Serve the 12 glazed meatballs hot over separately prepared cooked rice. Add the optional additional chopped green onion and toasted sesame seeds if desired; the three measured stalks and sesame oil are already in the meatballs. Refrigerate leftovers promptly and use within the author’s 3–4 days, or freeze. Reheat refrigerated leftovers thoroughly to 165°F (74°C).
