Method5 steps · about 30 min
Step 1: Mix the cheese, eggs (2), batter’s 2 tablespoons oil, granulated sugar (4 tbsp), 80 g batter flour, baking powder (1/2 tsp) and vanilla (1 tsp) with a hand mixer for no more than 2–3 minutes until homogeneous. The mixture should be sticky.
Step 2: Heat a non-stick or cast-iron frying pan over medium heat with the separate 3 tablespoons frying oil.
Step 3: Lightly flour a work surface using the separate extra flour. Scoop small spoonfuls of mixture onto it, coat lightly and flatten to small patties. Repeat to make about 14 patties.
Step 4: Test the oil with a tiny pinch of flour; it should sizzle. Fry the small patties in batches, turning to brown both sides. Adjust heat if they brown before their centres cook. Continue until lightly crisp outside and fully cooked through inside, then drain on paper towels; no fixed universal frying time is supplied by the source.
Step 5: Dust with optional icing sugar and serve with ready jam or fruit sauce, and optional sour cream or crème fraîche.
