Ayam Goreng: Classic Indonesian Fried Chicken
From the zcook collection
Ayam goreng, or fried chicken, is one of Indonesia’s favourite dishes. Unlike fried chicken elsewhere, Indonesian fried chicken is simmered in a paste before deep-frying, and does not require a batter.

Step 3: Add Salt (to taste) and sugar (1 pinch).
Step 5: Cover the pan and cook the chicken on medium heat until it boils. Lower the heat.
Step 6: Simmer for about fifteen minutes with the lid on. Remove the lid and cook for another fifteen minutes until the liquid evaporates and the chicken is cooked through; check 74°C (165°F) in the thickest part, avoiding bone. Continue cooking if needed, then turn off the heat.
Step 8: When you are ready to fry it, heat enough vegetable oil in a frying pan, on medium heat. Deep-fry the chicken until it turns golden-brown.
Step 9: Enjoy the fried chicken with sambal or if you prefer, a piece of bread.
