Method7 steps
Step 1: Mix the marinade 5 tbsp soy sauce, juice from 1 lemon, 1/4 tsp black pepper and 1 tsp garlic powder in a bowl. Coat the 1 lb raw pork-belly slices, cover and refrigerate for at least 3 hours. Lift the pork out and let excess marinade drip away; discard the used raw-pork marinade.
Step 2: In a clean bowl, make fresh basting sauce from its separate 5 tbsp soy sauce, juice from 1 lemon, 1/4 tsp black pepper and 1 tsp garlic powder, plus 1 tbsp oil. Keep it separate from the used marinade.
Step 3: Grill the drained marinated pork-belly slices for about 3 minutes per side, turning and brushing with the fresh basting sauce. Continue turning as needed until cooked through and the thickest flesh reaches 145 F (63 C). Baste before the final cooking checks; discard any leftover sauce exposed to the raw meat or its brush.
Step 4: Let the cooked pork rest for at least 3 minutes, then slice into bite-sized pieces.
Step 5: For the garlic (5 cloves) rice, heat its separate 3 tbsp oil in a pan over medium heat. Add the 5 crushed garlic cloves and cook until light brown, without burning.
Step 6: Raise the garlic-pan heat to high and add the 2 to 3 cups ready-cooked rice. Break up clumps gently and fold through the garlic oil. Add the 1/4 tsp salt and stir-fry for 5 minutes, folding occasionally, until hot throughout; chilled leftover rice should reach 165 F (74 C).
Step 7: Divide the garlic fried rice and sliced grilled pork belly among three plates. Add one of the 3 ready-fried eggs to each plate and serve hot.
