Method7 steps · about 30 min
Step 1: Finely chop the onion (1/2 medium), scallion (1), carrot (1 small) and selected 4 oz beef, pork, chicken or shrimp.
Step 2: Heat a large skillet over medium high heat with 2 tablespoons of oil. Add the onion, scallion, carrot, and the selected prepared meat or shrimp, and stir fry until the onion turns soft and the meat is cooked through. Stir in 1 tablespoon of soy sauce and salt (to taste) and pepper (to taste) to taste.
Step 3: Reduce the heat to medium. Add the rice (2), and stir well until the clumped up rice is broken up and all the ingredients are well combined. Add 1-1/2 tablespoon ketchup and salt and pepper (to taste) to taste, and continue to stir until the ketchup is evenly incorporated into the fried rice. Transfer to a plate if using the same pan (non-stick) for the eggs.
Step 4: For the first omelette, beat 2 of the 4 eggs with 1 pinch egg salt. Lightly oil a small nonstick pan, heat over medium-low, add beaten eggs and swirl to cover. Keep the other 2 eggs for the second omelette.
Step 5: When the omelette bottom is set, turn off the heat and add half the prepared fried rice in the middle. For the source still-runny top, use pasteurized eggs; otherwise let the egg become fully set before adding rice.
Step 6: Using a spatula, fold both sides of the omelette over the rice. Push the whole omurice to the side of the pan.
Step 7: Flip onto a plate, optionally shape with foil or a paper towel, and drizzle extra decoration ketchup as desired. Repeat egg preparation, filling, folding and plating with the remaining 2 eggs, 1 pinch egg salt, fresh light pan oil and remaining half of fried rice to make the second serving.
