Step 1: Preheat the oven to 400°F /205°C.
Step 2: Wash and dry the sweet potato (1), then prick a few holes in its skin.
Step 3: Lightly coat the outside with shortening.
Step 4: Bake on a baking sheet for about 45 minutes, until tender throughout.
Step 5: Let it cool enough to handle, then cut lengthwise into two halves.
Step 6: Scoop the flesh into a bowl, leaving about ¼ inch /6 mm of potato inside each skin.
Step 7: Keep the shells intact with their thin potato walls so they will hold the filling; set them on the baking sheet.
Step 8: Add 1–2 tbsp cream cheese, 2–4 tsp brown sugar and ¼–½ tsp vanilla to the scooped flesh, choosing within those source ranges to taste.
Step 9: Mix the filling until creamy.
Step 10: Stir a few pinches cinnamon into the filling, then taste and adjust if desired.
Step 11: Spoon the prepared filling into the two shells and smooth the tops.
Step 12: Sprinkle with a little cinnamon, the separate topping brown sugar and pecans to taste.
Step 13: Return to the oven until the filled halves are warm throughout; no exact second-bake time is specified.
Step 14: Top with a little butter.
Step 15: Serve while warm.
