Step 1: Preheat the oven to 350°F / 175°C.
Step 2: Trim the tips from the washed sweet potatoes (4 large).
Step 3: Peel and slice the sweet potatoes into even ½-inch / 1.25 cm circles.
Step 4: Arrange the sliced sweet potatoes in a 9 × 13-inch baking dish.
Step 5: Melt ½ cup unsalted butter over medium-low heat in a saucepan.
Step 6: Stir in 2 cups granulated sugar until combined.
Step 7: Stir in ¼ cup heavy whipping cream until the mixture is creamy.
Step 8: Stir in 2½–3 tsp cinnamon, ½ tsp nutmeg, 1–2 pinches ground cloves and 1–1½ tbsp pure maple syrup. Add 1–2 tsp vanilla if desired. Taste the syrup and adjust the spices to your preference.
Step 9: Pour the prepared syrup over the sweet-potato slices.
Step 10: Cover the dish with foil and bake for 40 minutes.
Step 11: Uncover, baste with the syrup in the dish and bake for another 20–25 minutes, until fork-tender.
Step 12: Lift the candied sweet potatoes from the syrup with a slotted spoon and serve immediately.
