Step 1: Put the chopped tomatoes (3–4 large) in a saucepan. Cook over high heat for 5 minutes, watching and stirring as they release their juices.
Step 2: Lower the heat under the tomatoes from step 1 and cook gently for another 25 minutes, stirring occasionally, until softened into a sauce.
Step 3: Take the softened tomatoes from step 2 off the heat and carefully blend with a hand blender until smooth.
Step 4: Stir a pinch of dried Mediterranean herbs, salt and black pepper into the smooth tomato sauce from step 3. Taste and keep it warm.
Step 5: If making the parsley relish, finely chop the handful of parsley. Mix it with the juice of the lemon (1), extra virgin olive oil and a little relish salt in a small bowl.
Step 6: Rinse the halloumi (1 packet) with clean water, drain and pat dry. Slice it thickly, around 2 cm wide, and have the warm sauce and optional relish ready.
Step 7: Heat a grill pan until ready to cook the prepared halloumi slices from step 6.
Step 8: Place the halloumi slices from step 7 on the hot grill pan. Grill for around 3–4 minutes, watching until marked and slightly softened; turn as needed for even colouring.
Step 9: Spread the warm seasoned tomato sauce from step 4 onto a serving plate and arrange the grilled halloumi from step 8 on top.
Step 10: If you made the parsley relish in step 5, drizzle some over the plated halloumi from step 9. Serve any remaining relish separately.
