Step 1: Preheat to 350°F / 175°C. Grease a 9-inch deep-dish pie plate with the separate additional butter.
Step 2: In a large bowl, toss the apples (2 pounds) with the sugar (¼ cup), lemon juice, cinnamon (2 teaspoons), cardamom (½ teaspoon) and a pinch of salt. Transfer to the prepared pie plate.
Step 3: Whisk flour (1 cup), the ½ tsp batter salt and baking powder (½ teaspoon) in a bowl. In another bowl whisk the cooled melted ½ cup butter, ¾ cup brown sugar, the ONE large egg and vanilla (1 teaspoon). Fold in the dry mixture until just combined.
Step 4: Spread the batter evenly over the top of the apples and sprinkle with turbinado sugar.
Step 5: Bake about 50 minutes until the top is golden brown and the apples bubble at the edges. Cool to room temperature before slicing so the filling can set.
