Method5 steps
Step 1: Preheat the oven to 375°F (190°C). Grease the kuih bahulu mold with a little of the separate greasing oil, then warm the mold in the oven for about 1–2 minutes. Carefully remove it and keep it warm until ready to fill. Reserve the measured 3 tbsp batter oil for step 3.
Step 2: Beat all three eggs with an electric hand mixer until light and fluffy. Add the full 1 cup granulated sugar and continue beating until dissolved and the mixture is thick and sticky.
Step 3: Stir the full 1 tsp vanilla into the complete beaten egg-sugar mixture from step 2. Gently fold in all 1¼ cups sifted flour and ¼ tsp baking powder. Add all the measured 3 tbsp canola oil and briefly mix until well blended, avoiding overmixing the flour.
Step 4: Spoon some of the batter from step 3 into the prepared mold, filling each cavity about 90% full. Bake for about 15 minutes PER MOLD BATCH at 375°F (190°C), until golden, firm and a center toothpick comes out clean. Allow the cakes to cool briefly in the mold, then gently release them onto a wire rack. Repeat with the remaining batter, regreasing and warming the mold as needed. The number of cakes and batches depends on the mold size.
Step 5: Let all the baked cakes from step 4 finish cooling on the wire rack. Dust lightly with separate optional powdered sugar if desired. Serve the complete batch as four dessert portions; the actual cake count varies with the mold.
