Step 1: Heat the tablespoon olive oil in a large skillet over medium heat. Add all one pound of bratwurst and turn them until browned on every side, about 5 minutes. They will finish cooking during the simmer. Transfer the browned sausages to a plate, keeping the remaining fat and juices in the skillet.
Step 2: Add all the sliced onion and peeled apple (1 large), plus the minced garlic (1) if using, to the same skillet with its remaining fat and juices. Sauté for about 5 minutes until the onion is translucent and starting to caramelize.
Step 3: Stir all the drained sauerkraut into the sautéed onion and apple. Add the initial ½ teaspoon caraway, initial ½ teaspoon paprika, some ground pepper to taste and the single cup beef broth. Stir to combine.
Step 4: Return all the previously browned bratwurst to the assembled sauerkraut mixture in the skillet.
Step 5: Cover and simmer gently over low heat for about 20 minutes, until the raw pork or pork-and-beef bratwurst is cooked through and reaches at least 71°C (160°F) in the centre. Continue cooking if needed rather than relying on the clock alone. Taste the kraut and add only any additional caraway, additional paprika or pepper it needs. Serve hot as 4–5 portions. Mashed potatoes shown in the photograph are an optional serving accompaniment.
