Step 1: Preheat the oven to 350°F / about 180°C. Have the half onion chopped and garlic peeled, wash and dry the lettuce and tomato, slice the tomato and separate red onion for garnish, and have the five bacon slices already cooked before assembling.
Step 2: Combine all the ground beef (1¼ lb) and raw Mexican chorizo (¾ lb) in a large bowl.
Step 3: Blend the chopped half onion, black pepper (¼ tbsp), salt (¼ tbsp), cumin (¼ tsp) and garlic with all ¼ cup water. Pour this seasoning into the raw meat mixture, combine thoroughly and shape into five evenly sized burger patties. Keep raw-meat utensils separate from the garnishes and cooked food.
Step 4: Heat a skillet, grill pan or grill and cook the patties, turning as needed, until every centre reaches at least 71°C / 160°F and the meat is fully cooked. Use a clean plate and clean utensils for the cooked patties.
Step 5: Spread butter on the cut surfaces of the five split buns. Put them in the preheated oven for 5 minutes, until warm and lightly toasted.
Step 6: In a clean blender, blend the whole chipotle chile with all 1 cup mayonnaise on low speed until smooth.
Step 7: Spread chipotle mayonnaise on both cut halves of each bun, using as much as desired. Keep any clean unused chipotle mayonnaise covered in the refrigerator.
Step 8: Layer lettuce, tomato and separate red onion slices on each bottom bun. Add a cooked patty, one slice pepper jack and one ready cooked bacon slice, then close with the top bun. Serve the five burgers hot.
