  1. Step 1: Wash and drain the spinach and chop the onion before cooking. Heat 3 tablespoons of cooking oil in a pan.

Uses 1½ cups fresh baby spinach · 1 medium yellow onion, chopped · Water for washing baby spinach, as needed · 3 tbsp oil for filling

  2. Step 2: Add the prepared onion and sauté until soft.

Uses All chopped onion with the first 3 tbsp oil; washed spinach remains held

  3. Step 3: Drain the tuna from its can and discard the packing water. Add all the drained tuna to the onion and cook, stirring, for 2 minutes.

Cook tuna with onion · 2 minUses All softened onion with its cooking oil · Drained tuna from the single 5 oz can

  4. Step 4: Add the washed spinach and cook, stirring, for 1 minute until wilted.

Wilt spinach with tuna · 1 minUses All warmed tuna, onion and the first oil share · All 1½ cups washed and drained baby spinach held from step 1

  5. Step 5: Season the filling with salt and black pepper to taste. Transfer it to a clean plate and cool until it is no longer hot enough to set the beaten eggs on contact; use it promptly.

Uses All cooked tuna, onion, wilted spinach and its cooking oil · Salt, to taste · Ground black pepper, to taste

  6. Step 6: Crack all 5 eggs into a large bowl and beat until the yolks and whites are fully blended.

    Uses 5 eggs

  7. Step 7: Check that the filling is no longer hot, then mix all of it into the beaten eggs.

Uses All five beaten eggs · All cooled tuna, spinach, onion, seasoning and filling oil

  8. Step 8: Heat the remaining 2 tablespoons of oil in an omelette pan or a frying pan wide enough to hold the mixture.

Uses Remaining 2 tbsp oil for omelette

  9. Step 9: Pour in the egg and tuna mixture. Cook over low-to-medium heat for about 2 minutes, gently pushing set edges towards the centre so uncooked egg can reach the pan. Continue as needed until the underside and edges are set enough to turn.

First side of tuna omelette · 2 minUses All remaining 2 tbsp cooking oil · All mixed beaten egg, cooled filling and its retained oil

  10. Step 10: Turn the omelette carefully with a wide spatula. Cook the second side until all the egg is fully set, with no runny centre.

  11. Step 11: Lift the fully cooked omelette onto a serving plate.

Uses The cooked omelette lifted from the pan, leaving any excess frying oil behind

  12. Step 12: Divide into three portions and serve hot, with ready banana ketchup if desired.

Uses The finished plated omelette · Ready banana ketchup to serve, as desired
