Step 1: Before heating the skillet, wash and peel the six potatoes. Wash the lime (1) and herbs, dry and chop the herbs, and squeeze the lime juice into a separate bowl. Peel and mince the two garlic cloves. Keep the prepared garlic, lime juice and herbs aside, with each herb divided into two equal half-cup portions. Put the whole peeled potatoes in a large pot with fresh water to cover. Bring to a boil, then cook for about 10 minutes from boiling, checking until they are cooked through but still firm enough to cut.
Step 2: Drain the potatoes and discard the cooking water. Let them cool only until safe to handle, then cut into bite-sized cubes or pieces and keep them aside.
Step 3: Heat the 3 tbsp olive oil in a cast-iron skillet over medium heat until shimmering. Add the prepared garlic, 1 tsp red pepper flakes and 2 tsp coriander seeds. Cook for 2–3 minutes, checking from 2 minutes and stirring so the garlic becomes fragrant without burning; lower the heat if needed. Then stir in the 2 tsp turmeric and all the prepared lime juice.
Step 4: Add the cut potatoes to the skillet and toss well in the spiced oil. Add the first ½ cup each of cilantro, parsley and dill. Cook for about 4 minutes, tossing, until the potatoes are fully tender and coated in the herbs and spices. Season with kosher salt and black pepper to taste.
Step 5: Remove from the heat and top with the remaining ½ cup each of cilantro, parsley and dill. Add the optional extra red pepper flakes to taste. Serve warm as six side portions, or let cool briefly for room-temperature serving.
