Method9 steps · about 45 min
Step 1: Prepare all the vegetables before heating the pot. Wash and dice the chayote (4 pieces), wash and trim the long green beans (6 oz) and cut them into bite-size lengths, and wash enough baby spinach (1½ cups) to measure 1½ cups. Keep these vegetables separate. Peel and wedge the onion (1), wash and wedge the tomatoes (4), crush the three thumb-size ginger pieces, and crush and chop the garlic (6). Heat all 3 tablespoons of cooking oil over medium heat. Add all the onion, garlic, ginger and tomatoes and sauté for about 2 minutes, until the onion becomes translucent and the tomatoes soften.
Step 2: Add all the raw chicken wings (2 lb). Sauté for about 3 minutes, turning them until their outside starts to turn light brown. They finish cooking in the broth.
Step 3: Pour all 6 cups of soup water into the pot. Cover and bring the soup to a boil.
Step 4: Lower the heat to a gentle simmer and keep the pot covered. Simmer for about 20 minutes, until the chicken is tender and cooked through, reaching at least 74°C / 165°F. Continue gently if needed before adding the vegetables.
Step 5: Add the Maggi Magic Chicken Cube (1) and all the held diced chayote. Stir to dissolve the cube and simmer for 4 minutes, giving the chayote a head start before the beans.
Step 6: Add all the held long green beans. Season with fish sauce and ground black pepper to taste. Simmer for about 5 minutes, until the beans and diced chayote are tender; continue gently if needed.
Step 7: Add all the held baby spinach and stir gently. Cook at a gentle simmer for about 1 minute, just until the leaves wilt.
Step 9: Share between five portions and enjoy while hot.
