Step 1: Prepare the 1 pound of steaks. If they are thicker than ⅛ inch (3 mm), put each between two sheets of plastic wrap and pound with a flat meat mallet to that thickness. Already-thin milanesa steaks need no pounding.
Step 2: Season the prepared thin steaks with salt and pepper to taste.
Step 3: Into a large shallow bowl, add the flour.
Step 4: In a large shallow bowl, crack the 3 eggs and add the ½ cup milk. Beat with a fork until well mixed.
Step 5: In another shallow bowl, add the breadcrumbs and season with salt and black pepper.
Step 6: Lightly dredge one seasoned steak in flour on all sides, then dip it in the egg wash with tongs. Place it in the seasoned breadcrumb bowl, mound crumbs over the steak and press them firmly onto both sides. Set the breaded steak on a plate.
Step 7: Repeat the flour, egg-wash and breadcrumb coating with all remaining seasoned steaks. Place them on the plate with the first breaded steak, ready to fry.
Step 8: In a large skillet add enough oil to cover the bottom completely by about ⅛ inch. Heat skillet over medium until very hot shimmering.
Step 9: Add two milanesa steaks in a single layer and cook until brown, about 1-2 minutes. Flip and brown on the other side. Transfer to a paper plate lined with paper towels. Repeat this cooking step with the rest of the beef.
Step 10: Serve the cooked steaks immediately while warm. Discard any unused flour, egg wash and breadcrumbs that contacted raw meat.
