Method10 steps

  1. Step 1: Use a scale to weigh the salted butter (100 g), fresh grated parmesan (100 g) and plain flour (95 g). Put all three in a food processor; add the optional chopped fresh rosemary with the parmesan. This recipe follows the food-processor route.

Uses 100 g salted butter, chopped · 100 g fresh grated parmesan · 95 g plain flour · 1 tbsp fresh rosemary leaves, roughly chopped, optional

  2. Step 2: Pulse the ingredients assembled in step 1 until they form a wet, crumbly dough. Stop once evenly combined.

  3. Step 3: Turn out the wet crumbly dough from step 2 and gather it together gently, keeping all the optional rosemary already mixed into it.

  4. Step 4: Lightly flour the work surface. Knead the gathered dough from step 3 just enough to bring it together, then shape all of it into two logs, each about 3 cm in diameter and 15 cm long.

  5. Step 5: Wrap both logs from step 4 and refrigerate for about one hour, until firm enough to slice cleanly.

  6. Step 6: As the logs finish chilling, preheat the oven to 180°C/350°F. Line one large or two ordinary baking trays with baking parchment.

  7. Step 7: Unwrap both firm logs from step 5 and slice them with a sharp knife into rounds about 7 mm thick.

  8. Step 8: Arrange all the sliced biscuits from step 7 on the lined tray or trays, leaving at least 2 cm between them.

  9. Step 9: Bake the trays of biscuits from step 8 for about 12 minutes, checking for a light golden color; continue only as needed for that color.

  10. Step 10: Let all the baked biscuits from step 9 stand on their trays for five minutes, then transfer them to a wire rack to cool completely.
