Step 1: Trim any remaining cooked meat from the turkey carcass (1) and keep it refrigerated for topping. Put the carcass in a pot with all four ginger slices and enough cold water to cover. Bring to a full boil, cover and simmer gently over low heat for 30 minutes. Strain through a sieve and discard the bones, skin and ginger. Keep the strained broth ready; its finished volume will depend on the carcass and covering water.
Step 3: Shred enough refrigerated cooked turkey for one bowl and prepare the cooked vegetables. Ladle enough strained broth from step 1 for the bowl into a small saucepan, add the turkey and vegetables, and heat together until the leftovers reach 74 °C (165 °F) throughout. Keep this hot for assembly. Cool and refrigerate the remaining broth promptly in shallow containers; its remaining volume is not specified.
Step 4: In one serving bowl, combine 1 tbsp light soy sauce, 1 tsp black rice vinegar, ¼ tsp sesame oil, one pinch white pepper and 1 tsp minced garlic. Add the drained noodles from step 2 and all the hot broth, turkey and vegetables from step 3. Garnish with finely chopped scallion and the preserved mustard stem if using, then drizzle chili oil to taste. Serve immediately.
