Step 1: Trim away the firm root base of the 200 g enoki mushrooms, rinse if needed and pat dry. Divide into small bundles. Wrap each bundle snugly with a thin slice from the 225 g ribeye supply, continuing until all mushrooms and beef are rolled.
Step 2: Mix ½ cup chicken stock, 3 tbsp soy sauce, 1 tbsp sesame oil, 2 tbsp mirin, 1 tbsp sugar and ¼ tsp black pepper for the roll sauce.
Step 3: Heat the 1 tbsp neutral oil in a pan over medium-high heat. Add the sliced ½ brown onion and sauté for about 3 minutes until soft and translucent.
Step 4: Arrange all the assembled beef-enoki rolls over the softened onion in its cooking oil, then pour over the complete prepared sauce. Bring to a simmer, cover and simmer for about 3 minutes, until the thin beef is cooked and the mushroom bundles are hot and softened; continue if needed for that endpoint.
Step 5: Once the rolls are cooked, uncover the pan. Lightly beat the 2 eggs if needed and pour them over the rolls, onions and sauce. Cook uncovered for about 1 minute, until the egg is just set.
