Step 1: Cook the sweet potato noodles according to the package direction. Rinse the noodles, drain well and chop them into small pieces. Set aside
Step 2: In a large mixing bowl combine the pork (2/3 lb), garlic (2 cloves), rice wine, season with salt and pepper (to taste), and mix well. Set aside.
Step 3: Place tofu on a fine cotton cloth and squeeze it to remove water from the tofu. Mash the tofu if needed.
Step 4: Add the noodle, kimchi, tofu, chives, and egg (1) to the bowl with pork mixture and mix well. Season the filling with salt and pepper (to taste).
Step 5: Keep unused wrappers covered with a damp cloth. To make half moon shape; Place about 1 1/2 teaspoonful of filling on the wrapper. Dab some water on the edge of wrapper using your finger and fold in half. Pinch the edge to seal tightly.
Step 6: To make full moon shape; from the half moon, bring the both ends to the center and overlap the ends a little, dab the ends with water and seal tightly.
Step 7: Cook the assembled dumplings before serving. For pan-frying, fry in a little oil until golden on both sides, add a little water, cover immediately and cook for another 1-2 minutes until the filling is cooked through. Alternatively, boil in water for 3-4 minutes until the dumplings float and the filling is cooked through.
Step 8: Mix the soy sauce (4 Tbsp) and rice vinegar (2 Tbsp) with the optional Korean chilli flakes to make a dipping sauce. Serve with the cooked dumplings.
