Method5 steps · about 50 min
Step 1: Combine only the meat-stuffing ingredients: chopped green onion (2 tablespoon), grated ginger (1/2 tablespoon), egg (1), ground pork (1 cup), chopped shrimp (1/2 cup), black pepper,1/2 tablespoon sesame oil, oyster sauce (1 tablespoon) and filling salt (to taste) to taste. Stir in one direction until sticky. Keep wrappers, greens and soup-seasoning groups separate.
Step 2: Put a wrapper in your hand and add about 1 teaspoon filling, or slightly more if the wrapper size allows. Moisten the edges, fold diagonally into a triangle and press to seal. Bring the two outer corners together and press firmly, moistening if needed. Repeat with remaining wrappers and filling.
Step 3: Choose a soup version and divide its seasonings between the serving bowls. Spicy version:1 tablespoon sesame oil, soy sauce (1 tablespoon), chili oil (1 teaspoon), black vinegar (1 teaspoon), smashed garlic (1 teaspoon), chopped spring onion and spicy-soup salt (to taste) to taste. Mild version: dried shrimp (1 teaspoon),1 teaspoon sesame oil, chopped spring onion, optional dried seaweed (1 small pieces) and mild-soup salt to taste. Do not add both alternatives to the same bowl.
Step 4: Bring a large pot of water to a boil. Cook the assembled wontons about 5 minutes, until the wrappers and filling are cooked through. Add optional leafy vegetables during the last 1 minute, continuing if needed until tender.
Step 5: Add about half a bowl of hot wonton cooking water to each chosen seasoned serving bowl, or use hot stock instead. Transfer the cooked wontons and any greens into the bowls and serve immediately.
