Method5 steps

  1. Step 1: Thinly slice the cabbage, onion (1/4 small), and carrot (1/2 small). Cut the garlic chives (2 stalks) into about 1.5-inch long pieces. If using a scallion, thinly slice diagonally.

Uses 3 oz green cabbage (up to 4 oz) · 1/2 small carrot (about 0.5 oz) · 1/4 small onion (about 0.5 oz) · 2 stalks garlic chives (or 1 small scallion)

  2. Step 2: In a large nonstick pan over medium heat, melt a portion of the divided butter (or margarine or olive oil), using as needed or to taste. Toast both bread (2 slices) slices until golden, 1–2 minutes per side, moving and flipping them. Transfer to a plate; reserve the remaining fat for the omelet.

Toast both sides, 1–2 minutes per side · 4 minUses 2 slices bread (white, wheat, multi-grain, or milk bread) · portion of the 2 Tbsp divided butter or alternative fat, as needed

  3. Step 3: Reserve about one fifth of the sliced vegetables. Place the remaining four fifths in a deep 2-cup bowl or cup with a pinch of salt and black pepper (to taste) to taste. Add the egg (1 large) and mix firmly with tongs or a fork until the egg and vegetables are incorporated and reduced in volume, about 20 seconds.

Uses four fifths of the sliced vegetables · 1 large egg · 1 pinch salt, or to taste · black pepper to taste

  4. Step 4: Melt some of the remaining divided butter (or margarine or olive oil) in the same pan over medium heat. Add the egg-vegetable mixture and flatten it into a large round. Scatter the reserved vegetables on top. Cook until lightly golden, about 3 minutes. Carefully flip, add more of the reserved fat as needed, and cook for about 2 minutes more, until golden and the egg is set.

3 minutes first side, then about 2 minutes until egg is set · 5 minUses egg-vegetable mixture · reserved one fifth of the sliced vegetables · remaining divided butter or alternative fat, as needed

  5. Step 5: Place the omelet on one piece of toast. Sprinkle it with sugar (to taste) and top with a good squirt of ketchup (to taste) to taste, and place the other slice of bread on top and serve.

Uses cooked vegetable omelet · two toasted bread slices · sugar to taste (Halmeoni Toast uses a heaping tablespoon) · ketchup to taste
