  1. Step 1: Bring 2 quarts water to a boil in a separate pot. Rinse all 1½ cups bean sprouts in cold water and drain. Julienne the 2 scallions, keeping whites and greens separate. Mix the 2 tsp soy sauce, 1 tsp dark soy sauce, ½ tsp sesame oil, ¼ tsp salt, ¼ tsp sugar, ½ tbsp Shaoxing wine and ¼ tsp white pepper in a small bowl. Have everything prepared before heating the wok.

  2. Step 2: Add all 8 oz fresh pan-frying egg noodles to the boiling water from step 1 and boil for about 1 minute. Rinse well with cold water, then drain very thoroughly in a colander. Keep the prepared sprouts, scallions and sauce ready beside the drained noodles.

  3. Step 3: Use a wok or pan wide enough to spread this batch thinly. Heat it over high heat and coat with the first 1 tbsp vegetable oil. Add all the well-drained noodles from step 2 in a thin, even layer. Tilt the wok to distribute the oil and crisp the underside evenly. Watch closely and turn when the first face is crisp, using about 5 minutes as a guide.
