Method7 steps · about 12 hr 45 min
Step 1: Trim any tough silvery sinew and thick edge fat from the thin flanken ribs. Soak in cold water for 15–30 minutes, changing the water once or twice if cloudy.
Step 2: While the ribs soak, blend the soy sauce (6 tbsp), dark brown sugar (3½ tbsp), sweet rice wine (2 tbsp), cored apple (70 g), onion (70 g), half kiwi with seed area removed, garlic (1½ tbsp), ginger (½ tsp) and pepper until smooth.
Step 3: Drain and thoroughly pat the soaked ribs dry. Place them in a sealable container, pour in all the blended marinade and toss gently to coat every piece. Seal the container.
Step 4: Refrigerate the coated ribs for 12–24 hours, turning them once or twice during the marination.
Step 5: Take the marinated ribs out of the fridge 15–30 minutes before cooking.
Step 6: Cook the thin ribs on a barbecue or in a skillet over medium-high heat, about 2–3 minutes per side, until caramelized and cooked through to your liking. For the author’s oven method, preheat the grill/broil setting to 200°C (392°F) for about 5 minutes, place the ribs on a rack over a drip tray and broil about 2–3 minutes per side, watching closely. Discard any leftover raw-meat marinade.
Step 7: Garnish the cooked ribs with chopped green onions, toasted sesame seeds or crushed pine nuts if using, and serve while hot.
