Step 1: Whisk the regular soy sauce (1/4 cup), brown sugar (2 Tbsp), rice wine (1.5 Tbsp), 1/2 Tbsp minced garlic, ginger (1 tsp), black pepper and 1/2 Tbsp toasted sesame oil together in a bowl. Set this ground-beef sauce aside.
Step 2: If making the optional bibimbap sauce, mix its gochujang (2 Tbsp), separate 1 Tbsp toasted sesame oil, sugar (1 Tbsp), water (1 Tbsp), 1 Tbsp sesame seeds, rice vinegar (1 tsp) and 1 tsp minced garlic in a second bowl. Set aside for serving.
Step 3: Heat a skillet over medium-high heat and add some cooking oil. Add the 500 g ground beef. Cook for about 3–4 minutes, stirring often and breaking up clumps, until mostly browned; it will finish cooking with the sauce.
Step 4: Pour the prepared ground-beef sauce over the browned beef. Simmer for about 2–3 minutes, stirring occasionally, until the beef is fully cooked. Stir in the 1/2 Tbsp finishing sesame seeds and the thinly sliced green onions (2 stalks), then remove from the heat.
Step 5: Divide the 2 cups already cooked rice among four bowls and top with the fully cooked beef. If desired, add any of the optional prepared sides: sliced avocado, cucumber or radish; cooked broccoli, asparagus or peppers; a cooked sunny-side-up egg; chopped kimchi; or seasoned roasted seaweed. Drizzle with the optional prepared bibimbap sauce to taste.
